Nestled among the mountains of Quindío at an altitude of 1680-1800 m, this coffee is born from a rare organic forest and a pioneering post-harvest lab, where farmers experiment with sustainable techniques and selective breeding. Our partner on the grounds leads an initiative, rooted in collaboration with 300 local families, addresses the core challenges faced by Colombian producers: unstable prices, high production costs, and limited access to specialty coffee markets.
At the heart of this initiative is a community wet mill, where cherries are carefully processed to maximize quality and value. By purchasing cherries directly (not parchment), fairer profits can be ensured—with a two-part payment system that stabilizes incomes and rewards quality. The first payment arrives upfront, while the second is tied to the final export price, ensuring producers share in the premiums paid by roasters.
The washed process creates a clean cup with fruity notes and sweetness, reflecting the region’s volcanic soil and high-altitude terroir.
Beyond coffee, El Fénix fosters education and empowerment. Through a Plant to Port program, producers are trained in farm management and cupping, bridging the gap between farm and roaster. The commitment to gender equity creates opportunities for women to lead in a traditionally male-dominated industry.
