The history of pink bourbon is fascinating. Pink Bourbon was previously thought to be a hybrid of Yellow and Red Bourbon varieties. Pink Bourbon has been found to come from an Ethiopian landrace variety.

This coffee is produced by small producers in Villamaria, Colombia, at an ideal altitude of 1800m. To encourage diversification of the varieties grown, improve the quality of the coffees and increase the income of the producers, our partner has developed a programme to make seedlings of pink bourbon available free of charge.
“Anoxic washed” processed; the cherries are initially fermented for 48 hours, submerged in water under a “water pillow” (sheet with water on top) before being de-pulped, fermented to loosen mucilage, washed and dried.
After harvesting and drying, the producers transport the cherries to a processing station at a lower altitude. Decaffeination using ethyl acetate (Sugar Cane/ EA) is carried out nearby, which reduces transport and maintains economic activity in the country of origin.
