We are proud to present this coffee from the renowned farm El Vergel, located in the Tolima region in Colombia. This 400-hectare estate, managed by Elias and Shady Bayters, is renowned for producing some of Colombia's most innovative and funky experimental coffees.
Elias & Shady are committed to continuous research and experimentation in their processes. This particular coffee, planted among the finca's guava trees, undergoes anaerobic (oxygen-free) fermentation for 48 to 60 hours at controlled pH levels, followed by intermittent drying at varying humidity levels to add complexity to the flavors. It is then stored in silos to reduce humidity and given a 45-day rest period to accentuate the beautiful complexity of fruity flavors.
