The history of pink bourbon is fascinating. Pink Bourbon was previously thought to be a hybrid of Yellow and Red Bourbon varieties. Pink Bourbon has been found to come from an Ethiopian landrace variety.

PRODUCER:
This coffee is produced by small producers in Villamaria, Colombia, at an ideal altitude of 1800m. To encourage diversification of the varieties grown, improve the quality of the coffees and increase the income of the producers, our partner has developed a programme to make seedlings of pink bourbon available free of charge.
The cherries are first fermented for 48 hours. Once this stage is complete, the cherries are then slowly dried on raised beds for 4 to 5 weeks.
After harvesting and drying, the producers transport the cherries to a processing station at a lower altitude. Decaffeination using ethyl acetate (Sugar Cane/ EA) is carried out nearby, which reduces transport and maintains economic activity in the country of origin.
